I am just throwing this out there but could it have something to do with some whipping cream or idk they must be doing something to make it so fluffy, it's almost like their frosting has little air holes in it. There are huge differences in both flavor and texture that i'm missing, most of my recipes have been something along the lines of powdered sugar, cream cheese, butter and maybe some slight variations in ratio's. I've literally tried 5 different frosting recipe's from different sites claiming to be "Cinnabon copycat frosting" But it never turns out even close to cinnabon's. The problem i've run into is the frosting. I'd argue my rolls are even better than cinnabon but. I've found a really great recipe that i can replicate and make some very nice cinnamon rolls.
